Why are we proud of Kashi Lalima?

Kashi Lalima, also known as Red Bhindi and Red Lady’s Finger, was developed by Indian Institute of Vegetable Research Varanasi. Kashi and Banaras are other names for Varanasi. Lalima stands for red colour. The red colour of Kashi Lalima is due anthocyanin pigments. Common variety of Lady’s finger has green colour due to chlorophyll pigment. It has been mentioned that Kashi Lalima has a higher nutritive value due to the presence of antioxidants.
